5 Easy Meal Prep Recipes Under 30 Minutes

“What do you want to eat?” We have all been asked this question and we have all asked this question too. Unfortunately, the answer is usually nobody can decide on anything or somebody deciding on something that is rather labour intensive and/or time-consuming to prepare. In other words, whether it comes from your schoolgoing children, a colleague, or the people at home, thinking about what to cook and/or eat can be tiring.

Here’s where meal prepping comes in handy. Make meals ahead of time either the night before or even days in advance (depending on your dishes) and pack them into your school and office containers for next-day snacks, brunches or lunches.

Note: Useful kitchen appliances that always comes through on occasion like these are the Noxxa Electric Multifunction Pressure Cooker and the Philips Airfryer.


Meal Prep Recipe 1: Lemon Chicken Rice

Ingredients

  • 2 tbsp olive oil or cooking oil
  • 2 chicken thighs
  • 1 large onion (chopped)
  • 2 cups rice
  • 8 cloves garlic (chopped)
  • 2 cups chicken stock
  • 40g coriander leaves
  • Juice of 1 lemon

For chicken marinade:

  • 1 tsp salt
  • 1 tsp black pepper powder
  • 1 tsp turmeric powder
  • 1 tsp chilli powder


Method

  1. Heat up oil in Noxxa Electric Multifunction Pressure Cooker inner pot using ‘STIR FRY’ function, add chicken and fry until golden in colour.
  2. Remove the chicken and set aside.
  3. Add onion, sauté until golden in colour.
  4. Add rice, sauté and mix well.
  5. Add garlic and chicken stock.
  6. Place the chicken on top of the rice. Close the lid and press the ‘RICE’ function for 7 minutes.
  7. After cooking, open the lid and remove the chicken.
  8. Add coriander leaves and lemon juice. Mix well.
  9. Garnish your Lemon Chicken Rice with more coriander leaves.


Meal Prep Recipe 2: Spinach Pasta with Chicken

Ingredients

  • 400g spinach
  • 200ml cooking cream
  • 400g pasta
  • 400g ground chicken
  • Salt and black pepper powder to taste
  • 1 tsp chilli powder


Method

  1. Put the spinach into a blender.
  2. Blend until smooth. Set it aside.
  3. Heat the Noxxa Electric Multifunction Pressure Cooker inner pot using ‘STIR FRY’ function and add in cooking cream.
  4. Then add the spinach juice. Let it cook for 5 minutes or till it comes to a boil.
  5. Add the boiled pasta. Add salt and black pepper powder to taste.
  6. Mix well and bring to a boil. Set aside.
  7. Clean the Noxxa Electric Multifunction Pressure Cooker inner pot and heat it up using the 'STIR FRY' function. Add in oil and ground chicken.
  8. Sauté chicken with chilli powder until cooked.
  9. Place chicken on top of spinach pasta or if preferred, mix the cooked chicken with the pasta that was set aside earlier.


Meal Prep Recipe 3: Grilled Golden Corn Cobs

Ingredients

  • 2 sweetcorn cobs
  • A pinch of salt
  • 1 tsp vegetable oil


Method

  1. Rub the cobs with salt and oil.
  2. Place the cobs into the Philips Airfryer basket and grill at 200°C for 11 minutes.
  3. Serve your grilled golden corn cobs! Tip: You may also squeeze half a lime on the cobs for extra flavour.


Meal Prep Recipe 4: Crispy Mushrooms

Ingredients

  • 300g fresh button mushrooms
  • 40g all-purpose flour
  • 1 egg (beaten)
  • 60g breadcrumbs
  • A pinch of salt


Method

  1. First, clean the mushrooms. Tip: Clean the mushrooms with a brush instead of washing them off with water.
  2. Place the flour, beaten egg and breadcrumbs on separate plates. Coat the mushrooms one after another in the flour, egg and breadcrumbs.
  3. Brush the mushrooms with oil and put them in the Philips Airfryer basket and bake at 180°C for 10 mins, until the mushrooms are crispy.
  4. Season the mushrooms with salt and let them cool before storing it in airtight containers for your next meal.


Meal Prep Recipe 5: Fluffy Muffins

Ingredients

  • 100g raisins
  • 90g butter
  • 90g sugar
  • 2 eggs
  • 140g wheat flour
  • 1 tsp baking powder
  • A pinch of salt


Method

  1. Wash the raisins in filtered cold water and set aside.
  2. To prepare the dough, use an electric mixer and beat the room temperature butter and sugar together till well combined. Crack and add eggs one after another while beating.
  3. Then add flour, baking powder, raisins and salt and beat for 5 mins.
  4. Put the dough in the muffin cups and place them into the Philips Airfryer basket. Bake at 180°C for 13 mins. Tip: The muffins may be sprinkled with icing sugar.
