Ayam Ungkep

Ingredients

  • 600g chicken breast
  • 1 tsp soy sauce
  • 1 tsp white pepper powder
  • 1 onion
  • 5 cloves garlic
  • 2cm fresh turmeric
  • 2cm ginger
  • 10 bird’s eye chilis
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp fennel seed powder
  • 1 cup vegetable oil
  • 2 stalks lemongrass
  • 1 cup water
  • 50ml coconut milk
  • 1 tsp salt
  • 1 tsp sugar

Metod

  1. Marinate the chicken breast in soy sauce and white pepper powder until well seasoned (this should take at least 20-30 minutes).
  2. Finely blend the onion, garlic, turmeric, ginger, bird’s eye chilis, coriander powder, cumin powder and fennel seed powder.
  3. Choose the Stir Fry setting on the Noxxa Low Sugar Rice Cooker
  4. Saute the blended ingredients in vegetable oil until fragrant.
  5. Add the chicken and lemongrass and cook for 3 minutes.
  6. Add the water and coconut milk and mix well.
  7. Close the lid and allow the chicken to cook for another 10 minutes.
  8. Season with salt and sugar to taste.
