Eggless Dairy-Free Muffins



Ingredients

  • 210g all-purpose flour
  • 12g baking powder
  • 130g castor sugar
  • 250ml warm water
  • 85ml vegetable oil
  • 1 scoop Nutrilite Soy Protein Drink
  • 1 scoop Nutrilite Soy Protein Drink (Green Tea, or your preferred flavour)
  • 100g dark chocolate, broken into small pieces (or your preferred filling, optional)

Method

  1. Mix the flour, baking powder, sugar, warm water and vegetable oil in a large bowl.
  2. Divide the mixture into two bowls.
  3. Add the Nutrilite Soy Protein Drink into one bowl.
  4. Add the Nutrilite Soy Protein Drink (Green Tea) into the other bowl.
  5. Line a muffin tray with muffin cases.
  6. Fill each muffin case about halfway with the first mixture.
  7. Add two or three small pieces of dark chocolate into each muffin case.
  8. Pour the second mixture on top of the first layer.
  9. Bake in a preheated oven at 170°C for 20 minutes.
