Coconut Bubur Molek



Ingredients (for 1 person):

  • 50g red dates, soaked
  • 5g chia seeds
  • 5g sugar
  • 8ml Plant To Table by Nutrilite White Chia Seed Oil
  • 50g ripened papaya
  • 5g barley, soaked
  • 20g white fungus, soaked
  • 5g lotus seeds, soaked
  • 400ml water

Coconut milk mixture

  • 30g fresh coconut milk
  • 1 pandan leaf, tied into a knot
  • 10g brown palm sugar
  • 1g salt
  • 10ml water

Method:

  1. Remove the seeds from the soaked red dates and cut the red dates into halves.
  2. Bring 150ml water to a boil and cook the red dates, chia seeds and sugar on low heat until the mixture is very soft. Puree with a blender and add the White Chia Seed Oil to make date marmalade. Set aside to cool.
  3. Peel and dice the papaya. Set aside.
  4. Put the soaked barley, white fungus and lotus seeds in a bowl. Steam with 250ml of water for 3 hours and set aside.
  5. In a pot, combine the fresh coconut milk with 10ml water and add the pandan leaf. Bring to a boil. Season with brown palm sugar and salt.
  6. Prepare another bowl and layer the date marmalade at the bottom as a base. Add the diced papaya and barley soup over the marmalade, then pour in the coconut milk mixture.
  7. Serve either hot or cold – enjoy!
